- 2 tbsp reduced-sodium soy sauce
- 1 tbsp grated fresh ginger
- 1 tsp honey
- 2 cups cooked brown rice
- 1 English cucumber
- 2 tbsp rice vinegar
- 2 scallions
Instructions
- 1Stir soy sauce, ginger and honey; brush over salmon.
- 2Broil 6–8 minutes until just opaque.
- 3Toss thin-sliced cucumber with rice vinegar and a pinch of sugar; rest 10 minutes.
- 4Serve salmon over rice with cucumbers and sliced scallions.
